Innkeeper's mushrooms

Ingredients: 300 grs. of fresh white mushrooms, 500 grs. of lamb's gizzards , a cup of olive oil, a glass of wine, pepper, parsley, an onion, a clove of garlic and salt.


Cooking instructions: Peel the mushrooms and chop them, adding salt, pepper and parsley. Fry them slightly in a frying pan with olive oil at a medium temperature. Clean the lamb's gizzards, drain them and dry them out with a dishcloth. Cut the garlic and the onion in small pieces and brown them with the lamb's gizzards. Once you've flipped them upside down and they're properly browned, sprinkle them with wine. Cook them for a few minutes, adding the mushrooms. Let it cook together for a while and serve.

Mushrooms and salmon pie



Ingredients: 300 grs of fresh white mushrooms, 250 grs of fresh salmon, six eggs, a tin of evaporated milk, two tablespoons of tomato sauce, 200 ml of bechamel sauce (or white sauce) salt, nutmeg, some lemon juice, butter and white pepper.

Cooking instructions: Cook the mushrooms for 20 minutes with some butter, some lemon juice and a half a cup of water. Stir them and set them aside. Place some layers of salmon and mushrooms in a baking pan. In a bowl, mix the eggs with the evaporated milk, the salt, the white pepper and the nutmeg. Pour the resulting mix in the baking pan and cook it in a double-boiler in the oven at a medium temperature for 50 minutes. Mix the bechamel (white) sauce with the mushrooms juice and add the tomato sauce. Serve it with this sauce.

Rice roll with mushrooms

Ingredients: half a kilo (around a pound) of fresh with mushrooms, two cups of rice, three sausages, one small onion, olive oil, garlic, parsley, tomato sauce and salt.

Cooking instructions: Chop the onion and fry it. Chop the sausages and add them together with the parsley and three tablespoons of tomato sauce. Boil everything during 20 or 30 minutes. Meanwhile, boil the rice and place it on the tin to empty it out aftwerwards on a plate. In the center of the roll, we will pour the mushrooms and we'll serve it with the fried sausages.

Mushrooms from La Mancha

Ingredients: half a kilo (around a pound) of white mushrooms, 250 grs of tomatoes, one onion, two tablespoons of olive oil, some white wine, a clove of garlic, some fine herbs, pepper, parsley, salt and four eggs.

Cooking instructions: Clean and cut the mushrooms, peel them off and remove the stems. Sauté the chopped onion. Add a small glass of wine, some fine herbs, garlic and salt. After that, add the mushrooms and tomatoes and cook for 10 minutes. Let it cool down. Serve with croutons and top it with fried eggs.

Autumn mushrooms


Autumn mushrooms - cooking with mushrooms
Ingredients: 250 grs. of white mushrooms, four steaks of yearling calf, mustard, wheat flour, butter, two onions, two glasses of white wine, two glasses of broth, tarragon, pepper, parsley, some sweet red peppers, six ripen tomatoes and some salt.

Cooking instructions: Coat the steaks in batter and brown them in butter. Take them away and then brown the onions which have been previuosly chopped. Add a tablespoon of wheat flour. Add the white wine, the broth, some tarragon and pepper and place the steaks on the skillet again. Cook them for 40 minutes. Cut the mushrooms mixed with parsley and the sweet red peppers cut in slices. Add them all to the meat when is almost done and leave everything cooking for 15 minutes. Serve everything with some baked tomatoes.
