Spring mushrooms

Ingredients: 250 grs. of white mushrooms, six eggs, a carrot, 50 grs. of boiled spinach, an onion, asparagus tips, 100 grs. of cured ham, a glass of chicken broth, white wine, wheat flour, garlic, olive oil and salt.

Cooking instructions:
Fry the ham cut in small dice and keep half of them. Fry the mushrooms cut in slices with garlic and salt but very lightly. In a saucepan, fry the chopped onion and carrot with a small amount of flour. Mix it with the broth, wine and add salt. Put all the ingredients with the spinach on a plate. Break the eggs on top of it and wait until it is set up. Decorate it with the asparagus tips and the cured ham.
