Autumn mushrooms - cooking with mushrooms
Ingredients: 250 grs. of white mushrooms, four steaks of yearling calf, mustard, wheat flour, butter, two onions, two glasses of white wine, two glasses of broth, tarragon, pepper, parsley, some sweet red peppers, six ripen tomatoes and some salt.

Cooking instructions: Coat the steaks in batter and brown them in butter. Take them away and then brown the onions which have been previuosly chopped. Add a tablespoon of wheat flour. Add the white wine, the broth, some tarragon and pepper and place the steaks on the skillet again. Cook them for 40 minutes. Cut the mushrooms mixed with parsley and the sweet red peppers cut in slices. Add them all to the meat when is almost done and leave everything cooking for 15 minutes. Serve everything with some baked tomatoes.

Mediterranean mushrooms

Ingredients: 300 grs. of white mushrooms, six lemons, black olives, a tin of sardines, butter, salt, pepper and parsley.

Cooking instructions: Cut the lemons in the shape of a bowl, squeeze them and keep the juice. In a bowl, cut the mushrooms and mix them with the sardines, a spoon of butter, the lemon juice and the black olives chopped. Mix everything and fill in the lemons. Let it cool down in the refrigerator.

Ingredients: Twelve medium sized white mushrooms, 300 grs of monkfish/goosefish, eight king prawns, eight cherry tomatoes, one green pepper and salt.

Cooking instructions: Carefully peel off the prawns and wash the mushrooms, the tomatoes and the pepper. Remove the bones from the fish and cut it in cubes, do the same with the pepper. Skewer everything together mixing colours and flavours. Add salt and grill it with a bit of oil.

Spring mushrooms

Ingredients: 250 grs. of white mushrooms, six eggs, a carrot, 50 grs. of boiled spinach, an onion, asparagus tips, 100 grs. of cured ham, a glass of chicken broth, white wine, wheat flour, garlic, olive oil and salt.

Cooking instructions:
Fry the ham cut in small dice and keep half of them. Fry the mushrooms cut in slices with garlic and salt but very lightly. In a saucepan, fry the chopped onion and carrot with a small amount of flour. Mix it with the broth, wine and add salt. Put all the ingredients with the spinach on a plate. Break the eggs on top of it and wait until it is set up. Decorate it with the asparagus tips and the cured ham.

Chicken with mushrooms

Ingredients: 250 grs. of mushrooms, a chicken, a small glass of olive oil, 100 grs. of cured ham, wheat flour, a lemon, white wine, garlic, parsley and salt.

Cooking instructions: Cut the chicken in halves, add salt, garlic and parsley. Sprinkle it with oil and bake it until it is properly cooked. Fry the ham and the chopped mushrooms with some garlic and parsley. Brown it and add a spoon of wheat flour, add the liquid obtained from baking the chicken, half a glass of white wine and some butter. Wait until the sauce is thick and pour it over the chicken.

Cooking time: 1 hour.

Mushroom toasts

Ingredients: 300 grs. of white mushrooms, 150 grs. of chopped cured ham, sliced bread, wheat flour, a small glass of milk, grated cheese, lemon, butter, salt, parsley and wine.

Cooking instructions: Clean and chop the mushrooms and boil them with a small amount of water, the juice from half a lemon and some salt. Drain it and keep the liquid. Melt a spoon of butter in a sauce pan and mix it with another spoon of flour. Afterwards, add the liquid we obtained when boiling the mushrooms, add a spoon of wine and the chopped cured ham . Finally add the mushrooms and put everything together on top of the toasted bread. Sprinkle the grated cheese and put it in the oven (medium temperature) for 5 or 6 minutes to obtain a dish au gratin.
